One of the most exquisite dining experiences in Sydney

Do you remember what you felt the first time you watched Titanic? Not the heartbreak when Rose and Jack said their final goodbyes. Not the feeling of your heart about to pump out of its chest in that car scene. No. We’re talking about the first time they showcased the glamour of the ‘unsinkable’ ship. That breathtaking ‘I wish I lived back then’ feeling – that’s what you’ll feel when you step inside Park Hyatt’s The Dining Room.

Ladies may not have to don a corseted gown (a dress and heels or blouse and trousers will suffice) and gents won’t need to invest in a tailored tux (a collared shirt and trousers will do the trick), but the ambience is the same as that uber-classy dining hall aboard the Titanic.

Be it à la carte or degustation, as each course arrives – the next more divine than the one prior – the sated stomach yells ‘no’ but the mind says ‘oh, yes’.

Set right on the harbour, The Dining Room offers superb views of the Sydney Opera House and you may even be presented the opportunity to watch a ship sail out into the open sea (highly likely, since we’re now in wet season).

If you’re lucky, Frederico, a beautiful, soft-spoken, well-groomed Italian waiter, will be at your service. In fact, every member of staff is more than willing to bend over backwards to ensure you have a pleasant evening. A lovely attribute in itself – then the food comes out.

The servings are generous and the flavours to die for. The soft, light, almost transparent john dory with an oh-so subtle taste of the ocean. The beef cheek that falls apart with the slightest touch of an eating utensil, accompanied by a fluffy salt-and-butter-filled pomme purée. The refreshing green mint tea bavarois with crunchy meringue.

The whole experience is the ultimate proof that, when it comes to fine dining, you get what you pay for.
